When a cauliflower head matures very rapidly, a condition called ricing can occur. Ricing is a condition in which the curd develops small flower buds that appear velvety or fuzzy. Optimally, the cauliflower head is harvested before that condition occurs. Can you eat cauliflower that is fuzzy? The cauliflower is not adversely affected, except by the appearance.
